Baked cheesy hash browns

Cheesy and Crispy Baked Hash Browns

This is one of my favorite recipes when I need comfort food. I am a huge fan of hash browns, and I have tried them in so many ways. I like my hash browns very crispy. This version is baked in the oven and can be as crispy as you would like it to be.

  • 1 bag of frozen hash brown potatoes thawed (I prefer hash browns by Ore Ida personally) (30 ounces)
  • 2 cans of condensed cream of potato soup (10.75 ounces each)
  • 2 cups of sour cream
  • 2 cups of shredded cheddar cheese divided into two separate cups. You could also use Blue or Gorgonzola cheese if you are into that.
  • 1 cup of Parmigiana Reggiano

Preheat oven to 350 F/180 C.  Grease a 3-quart baking dish with butter. In a large bowl, combine potatoes, soup, sour cream, 1 ¾ cups of cheddar cheese and Parmigiana Reggiano. Transfer the mix to the greased baking dish. Sprinkle with the remaining cheese. Bake uncovered for 45 minutes or until it is yummy and bubbly. Let stand for 5-7 minutes before serving.
